I had to make a new challenge for myself with baking, because of course I just can't let things be
I received an early birthday present this month, a Kitchen Aide mixer! What a difference from using my old hand mixer all the time. I LOVE it! Now, I can start a batch of batter and also line my cupcake pans.
Just those little things still gets me excited :)
So, my challenge was to make cupcakes from a recipe that I received from scratch in this wonderful environment of high altitude! What fun!
5 batches later, lots of ingredients, and help from my fellow taste testers (thanks neighbors) I finally got it! Now I can make a dozen cupcakes at a time of all different flavors.
So exciting to finally come up with something of my own!
October:
This month I had to try a great fall recipe: Spice Rum Cake with Maple Cinnamon Cream Cheese icing. Yummy! It reminded me of the great fall colors and orchards of the Midwest that I miss so much!
I also found out this month that my son has noticed that I bake a lot. He is starting to volunteer me to bake cakes, cupcakes, brownies or make candies to anyone that needs sweets! Oh-Well, I really am not busy enough :) Here is a cupcake that I made for his school's fair. Another picture is listed under the Holidays page.
December:
This month I decided to try something new with sugar cookies. Of course being in the high altitude is always a challenge to make anything from scratch!
I found the exact combo for the perfect cookie finally and then I had to try something new to ice them.
I outlined the cookies with butter cream icing and then melted colored chocolates to fill them in. Merry Christmas!
February:
I got to make Mickey and Minnie mouse cupcakes for my friends twins second birthday party. They were SO much fun to make and I got to try out a new icing recipe!

I made these cute pirate themed cakes for a friends pirate party. The treasure chests are made from Swiss cake rolls, candies, gold sprinkles and gold icing.
I also made these cute pizza cakes for a bbq. They are vanilla cakes with red icing, grated white chocolate as the cheese and cut out fruit roll ups as the pepperioni.
